Left-Over Cheesy Grits Omelet


What do you do with the extra grits sitting in the pot?  Don't throw the grits away.  Put them in the refrigerator and use for an omelet the next day.  Once they get cold and stick together,  it's easy to slice, scoop, and use as a filler for a delicious and satisfying  omelet.  Try it, you  just might like it.  Hope it becomes a favorite of yours as it is mine.

 4 eggs, mixed with 1/4 cup water...beat eggs and water together
left-over cheesy grits
cooked, chopped bacon
cheese of your choice.. i used pepper jack
chives, salt and pepper to taste


 i sliced my cold grits like this


 pour egg and water, that has been beat together, into a non-stick skillet,
cook omelet the usual omelet way...
start adding;  cheesy grits, bacon, and chives ...keeping to one side of the omelet.
salt and pepper

 add some cheese for inside the omelet
take off the heating eye..

 flip the side of the omelet over, so it looks something like this


 add more cheese, chives on top of omelet
place skillet with omelet in hot oven on broil for approx 5 minutes or till cheese starts to bubble




 enjoy with a refreshing, mimosa

    taste soooo good!

The Roosevelt New Orleans


After leaving cold rainy gray Washington State, we were  greeted with warm sunny torrential rains in Nola.  Well, at least the rain is warm, dries quickly, although very humid.  After settling in, at the Roosevelt, we headed for a day,  full of adventure, seeking, beignets, and chicory coffee. Sure that all would be found at the Famous French  Market

The sheer beauty of the Roosevelt Hotel is unbelievable.  Please pardon my camera skills, because I haven't come close to capturing the full spectrum of the hotel's elegance, beauty and sparkle.
My breath was taken away  many times, as I strolled, gazing at artwork, while being mesmerized by the crystal chandeliers.
