Left-Over Cheesy Grits Omelet


What do you do with the extra grits sitting in the pot?  Don't throw the grits away.  Put them in the refrigerator and use for an omelet the next day.  Once they get cold and stick together,  it's easy to slice, scoop, and use as a filler for a delicious and satisfying  omelet.  Try it, you  just might like it.  Hope it becomes a favorite of yours as it is mine.

 4 eggs, mixed with 1/4 cup water...beat eggs and water together
left-over cheesy grits
cooked, chopped bacon
cheese of your choice.. i used pepper jack
chives, salt and pepper to taste


 i sliced my cold grits like this


 pour egg and water, that has been beat together, into a non-stick skillet,
cook omelet the usual omelet way...
start adding;  cheesy grits, bacon, and chives ...keeping to one side of the omelet.
salt and pepper

 add some cheese for inside the omelet
take off the heating eye..

 flip the side of the omelet over, so it looks something like this


 add more cheese, chives on top of omelet
place skillet with omelet in hot oven on broil for approx 5 minutes or till cheese starts to bubble




 enjoy with a refreshing, mimosa

    taste soooo good!

Banana Pancakes drizzled with.....

While watching the TODAY SHOW, the cooking secment came on.  They were making chocolate and fried banana pancakes.  It looked so yummy, that I popped up from bed and decided to make them.
I decided to make mine without the shaved chocolate, and add flax seeds instead.  I made a warm caramel and pure maple syrup to drizzle over the pancakes, and topped them with freshly sliced banana and whip cream.  Need I say more?




pancake mix
water according to package directions
flax seed....I only used 1/2 tablespoon


bananas sauteed in butter
till their golden brown


when pancake edges begin to look dry, and bubbles appear on top,.......time to flip



in warm skillet
add some pure maple syrup
and caramel dip till......


it looks like this


drizzle warm sauce over pancakes
garnish with leftover fresh bananas
top with whip cream

Left-Over Lasagna Omelet

                          What do ya do with the little bit of this, and the little bit of that Left-Overs?

                                                How about a Left-Over Lasagna Omelet!


                                           4 large eggs
                                           fresh mozzarella...sliced
                                           fresh italian parsley...chopped
                                           clove of garlic..chopped


                                                               left-over lasagna


                                                                  then...slice it up


                                                   crack 4 eggs in a medium bowl
                                                   add approx.  1/4 cup of water
                                                   add chopped garlic
                                                   some salt and pepper to your liking
                                                   beat with fork....

                            put a  medium non-stick skillet on stove-top eye, on medium high heat.
                           spray generously with olive oil
                                                                           then......
                           pour egg mixture into the skillet
                          when edges of egg become flaky, lift the edges, swirling mixture around as it cooks

                                        when the omelet starts to look like this, it's time to add....


                                                        add sliced  lasagna, and parsley

                      with a spatula, gently fold the omelet so it looks something like this.
                      once folded, take off heat element, so the bottom of omelet doesn't over cook.

                                                                      italian parsley

                                                      put in hot oven.... broil 500 degrees
                                                                   till cheese melts



                                                                    smells heavenly

             luv  when i bite into the pepper, and all that wonderful juice trickles on the omelet

"I Hungy!"



"Ganny!  I hungy!  "Baby Girl PLEASE just lay here, watch Dora and let Granny SLEEP!"  What Granny wouldn't do for a few more precious hours of  beauty sleep!  With Granny-Guilt at its peak, I  contemplate,   to just give her  a cookie and quickly retreat to my bed, or  do the right thing and fix a healthy breakfast.  In a fog, I drag my bod from the warm down comforter, and leopard sheets, while Baby Girl squeals with joy, leaps from bed and flies into the kitchen.  Bacon, Ganny, I want bacon!   So, the sizzle of bacon, the crack of the eggs and the whistle of the kettle begins..........
